CeFoNa’s Mandates
The Centre for Food Safety and Naturopathy (CeFoNa), hosted in the Institute of Food Bioresources Technology, is one–of-a-kind applied food science research consortium comprised of Dedan Kimathi University of Technology and the food industry with the following Key Mandates:
- Coordination of food safety and naturopathy research relevant to Kenya under the Institute of Food Bioresources Technology.
- Establishment of an organic therapeutic herbal garden for the promotion of naturopathy, through innovations and capacity building
- Development and Commercialization of natural functional foods to innate the healing power of nature
- Conducting training on food safety that is relevant to the modern food industry
- Conducting research to protect and promote right to safe food and the environment.

What You Will Learn
By the end of this course, you’ll be able to:
- Understand the key elements of food safety required by ISO 22000.
- Navigate the ISO 22000:2018 standard by getting a comprehensive understanding of all clauses, terms, and requirements.
- Apply the Plan-Do-Check-Act (PDCA) cycle at two levels within a FSMS for continuous improvement.
- Master the Hazard Analysis and Critical Control Point (HACCP) principles for effective risk management.
- Implement Prerequisite Programs (PRPs) and Operational Prerequisite Programs (OPRPs) as outlined in ISO/TS 22002-1, as control measures to potential hazards
